No Bake Pancake Swiss roll with a sweet potato filling

So Valentine’s Day is upon us and I decided to try something I don’t often try – cooking a sweet dish. With Pancake Day just around the corner, I guess I got a little too excited though and combined pancakes with dessert to create a pancake Swiss roll. I had some sweet potato lying around in the house so I thought what better way to use it up!

I am pretty happy with this creation as I never really cook sweet dishes and I am a bit of a all-food-savoury junkie! If you like pancakes and you like sweet potato then you can’t really go wrong with this one.

Approx. calories per slice: 80 kcal

Ingredients for one large Swiss roll (8 thick slices):

For the pancake batter

  • 1 cup of milk (I used full fat)
  • Three quarters cup of wholewheat flour
  • 2 teaspoons of brown sugar
  • Oil to grease the pan

For the filling

  • 1 cup cooked and mashed sweet potato
  • 2 teaspoons of brown sugar
  • Half a teaspoon of cinnamon powder

Steps:

  1.  Combine all the ingredients (excluding oil) for the batter in a mixing bowl. Stir until lump-free.
  2. Mix up all the ingredients for the filling in another bowl. Best to mash up and add the sugar while the sweet potato is still warm so it combines better.
  3. Grease a large, non-stick fry pan with oil and place on a large stove-top on a low heat. I used Tefal’s 30cm pan which was the perfect size to create one large pancake from the ingredient amounts given.
  4. Place the batter inside the pan and tilt the pan so that the batter covers the pan’s bottom equally and cooks up nice and round. How much batter to put depends on the size of your pan.
  5. Cook for a few mins until the edges of the pancake are crisp and the pancake itself is looking browner and has a few bubbles on the surface. Then flip pancake to cook the other side.
  6. After around 2 mins, flip the pancake again and turn the gas off after both sides are equally cooked.
  7. Cut some foil that is large enough to cover the pancake and place on a plate. Place the pancake on top of the foil and apply the filling so that it covers the pancake.
  8. Roll up the pancake while still warm with the help of the foil and leave to cool down for around 10 mins covered with foil.
  9. Remove the foil, cut into slices and enjoy with a sprinkling of icing sugar!

Tips

  • I used a electric grill to cook my sweet potato. I first cut the sweet potato up into 1 inch wide slices. Then grilled for around 10 mins and left inside the grill for another 5 mins and that seemed to cook it perfectly for me! Don’t forget to remove the skin before mashing.
  • For the love heart shape, I simply cut out a stencil in card and sprinkled icing sugar through the card to leave the shape – quick and simple.
